Citarella Shares the Perfect Pizza Pie Recipe for Pi Day

It's nearly March, which means it's time to celebrate one of our favorite holidays – Pi Day! In our opinion, it's both a great excuse to embrace your inner nerd (how many numbers have you memorized of the mathematical constant?) and to consume pie.

Just in time for the holiday, Citarella at Hudson Yards is now serving pizza, and they were kind enough to share their recipe for making the perfect pie at home (below). Not in the mood to cook? You can also order their pizza for delivery through their app (text CITARELLA to 484848 to download).

Ingredients
· Citarella handcrafted dough
· Your favorite Citarella Sauce: Try Marinara, Filetto di Pomodoro or Vodka
· Mozzarella & Parmesan cheese
· Your favorite toppings

Directions
· Preheat oven to 450 degrees.
· Oil a 18”x13” half sheet pan or cookie sheet.
· Spread dough out on pan. Let dough rest as you do so; it will make it easier. Try to get dough as close to the edges as possible.
· Top with approximately 7 oz of sauce, 10 oz of shredded mozzarella, 2 oz of Parmesan and salt and pepper.
· Bake 12-15 min.

Wine Pairing: Citarella's wine director Michael Acheson picks Poggio delle Baccanti, Gragnano ($19) as the "ideal pairing with pizza." A "reasonable, chillable, natural red with a little spritz," the wine is "grown on the volcanic soils near Mt. Vesuvius. It smells like ripe berries, cherry, and crushed stone. You’ll want to serve this cold, on the side of a hot slice of pizza."
