Bodega Negra’s Grilled Corn Salad

Grilled Corn Salad Recipe

Summer is here along with all our favorite summertime flavors. This grilled corn salad from Bodega Negra delivers on every level. The crunch of fresh corn, the buttery texture of queso fresco, the cooling mint and the zesty lime. Do yourself a favor and fire up the grill tonight!

INGREDIENTS

2 Corn cobs, grilled and cut off cob

4 Tbsp. Lime vinaigrette (recipe below)

1 Large scallion, sliced

1 Tbsp. Corn nuts

1 Holland red chile, sliced thin

2.5 Tbsp. Queso fresco crumbled

1 Lime wedge (garnish)

Cilantro leaves, chopped, to taste

Fresh mint, chopped, to taste

METHOD

1 – Toss freshly grilled corn with all ingredients using half of the cheese

2 – Season with salt, place in bowl and top with remaining cheese

3 – Garnish with lime wedge

 

Lime Vinaigrette

 

INGREDIENTS

2 Qts. Olive oil

6 ¼ cups Lime juice, fresh squeezed

1 ¾ cups Sugar

METHOD

1 – Combine all in a blender and blend until sugar is dissolved

2 – Season with salt and black pepper
